Tortellini Soup

I LOVE making soups, especially in the winter.  I usually make a soup on Saturday or Sunday and then we'll eat off of that throughout the week for lunches or I'll have it when Jay is leading praise band rehearsal or something.  This tortellini soup is one of my absolute favorites.  It's so easy and packed with veggies and flavor!  It's a fun twist on a traditional vegetable soup.  And you can get most of the ingredients at Aldi (always a bonus, in my opinion... sorry if you don't have an Aldi near you!).  Don't worry about exact measurements- recipes are just guidelines (unless you're baking)!

1 lb. ground Italian sausage
1 8 oz. package refrigerated cheese tortellini
1 small onion, diced
2 cloves of garlic, minced
5 cups beef broth
1/2 cup water
1 cups sliced carrots (I think it's about 3 carrots or so... just add what you want!)
1 1/2 cups sliced zucchini (about 2 zucchinis)
2 cans of diced tomatoes (sometimes I dice up fresh ones)
8 oz. tomato sauce
1/2 t. basil
1/2 t. oregano
1 t. parsley

Cook the sausage in soup pot and then remove.  Saute onions and garlic in the same pot.  Add broth, water, carrots, tomatoes, spices, and sausage (back in).  Bring to a boil, reduce heat and simmer uncovered for 30 minutes.  Add zucchini and tortellini and simmer 25 minutes.  (It's fine to keep it on low on the stove for a while.  The leftovers are just as good!)
